Allergens & Gluten Free – What You Need to Know

Each year, millions of Americans have allergic reactions to food. Although most food allergy causes are relatively mild and minor in symptoms, some can cause severe reactions, and may even be life-threatening.
From the loading dock to table top -the nation’s leading expert on food allergens, Betsy Craig, will teach you how to how to keep diners safe as she takes you through an ANSI accredited food allergy and gluten free training course during the first half of the seminar. Following a short quiz, attendees will hear real life examples of notable brands who are setting the pace to accommodate special dietary needs in a variety of foodservice establishments.
